Country or Smothered Chicken Recipe
1 fryer, cut up (3 to 3 1/2 lbs.)
4 T. flour (about)
2 t. salt (about)
Pepper
4 T. butter
1/2 cup water
Turn oven to 450. Put chicken in casserole and sprinkle flour, salt, pepper
on and around it. Pour melted margarine over it, as evenly as possible.
Bake, uncovered, 20 minutes, then add water and cover. Reduce heat to 350,
bake, covered at least 1 hour longer or until very tender. There will be
delicious gravy in bottom of pan.
