3 whole skinless boneless chicken breasts — halved, cut
into 3x 1/2″ strips
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup celery — sliced
1/4 cup green onions — chopped
1/4 cup fresh parsley — chopped
1/3 cup fat-free sour cream
1/3 cup fat-free mayonnaise
1/2 teaspoon mustard seed
1 tablespoon dijon mustard
1 tablespoon lemon juice
8 lettuce leaves
1 cup cherry tomatoes — halved
1. Spray a 10″ skillet with cooking spray. Stir in chicken, salt and
pepper. Cook over medium high heat, stirring occasionally, until chicken is
browned and fork tender (10 to 15 minutes).
2. Stir in remaining ingredients EXCEPT lettuce leaves and cherry tomatoes.
3. On platter or individual salad plates place lettuce leaves. Place
chicken salad on lettuce; arrange tomatoes around salad.
